Pastries
There are five basic types of pastries you can learn to make: short crust, filo, choux, flaky, and puff pastry. Once you learn to make these different types of pastries you will be able to make just about any pastry recipe.
Short crust pastries are ideal for making things like pies, tarts, and quiche. It is probably the quickest and easiest pastry to make from scratch.
Filo dough is best known for being used in dishes such as baklava and borek. This fine, papery pastry is perfect for layering and adding your choice of flavoring in between. Filo dough enhances any flavor as it easily soaks up any flavors you add to your dish.
Choux pastry recipes contain few ingredients and are ideal for making treats like puff pastries or eclairs as the dough is stiff enough to hold cream or fruit filling and just mild enough not to overpower the filling flavor.
Puff and flaky pastries are similar to one another in texture and form. Both make a thin, flaky dessert when completed. Puff pastries are made by folding layers of dough and butter together to create fine layers such as in croissants. Flaky pastry also contains layers of butter in between layers but as opposed to folding the layers you want to leave as much air as possible between the layers to create air bubbles upon cooking.
Frozen desserts
Ice cream is probably the best known of the frozen desserts. Homemade ice cream recipes offer a rich, creamy type of ice cream that you definitely don’t want to miss out on. Even a basic vanilla ice cream is more flavorful when made with cream, real vanilla and fresh fruit. You can eat ice cream by itself or as a great summer topping to cakes, brownies or even sandwiched in between two cookies to make your very own ice cream sandwich.
Fruit bars and sorbets are excellent treats as a dairy free alternative. Cool and refreshing, either of these frozen desserts will leave you feeling refreshed in the face of scorching summer temperatures.
