Welcome, welcome, welcome! Or Velkommen as we say in Denmark! I want to share my passion for Nordic food by presenting you with a variety of delicious dishes that are economical and easy to make.
As a child in Denmark I loved to eat the wonderful meals my mother prepared for us. We grew up with cold, salty ocean waters washing our shores along with plenty of sunshine and clean air, so every meal was special. Fish, chicken, cheeses, sauces, all kinds of hearty vegetables, pastas, breads, pastries, and more. But why limit the cuisine when countless more eating adventures lay beyond? As an adult I began to explore the foods of Sweden, Norway, and farther. The Nordic region, referring to “North,” has a history of thousands of years of human habitation. The climate ranges from temperate European to icy Arctic. Our cuisine reflects ancient traditions as well as modern cosmopolitan trends.
I’m excited to share my table with you. You’ll be able to choose from a variety of simple recipes that the whole family can help put together. Although I like to emphasize the use of healthful, fresh ingredients, I also suggest alternatives so you can choose what works for you. Good food should nourish you as well as make you feel happy. In fact, several studies show that Nordic people are among the happiest in the world – maybe our food is one reason why!
